I am holder of a bachelor's and a master's law degree from the National Kapodistrian University of Athens and of a bachelor's philosophy degree from KU Leuven in Belgium. Foreigners that stayed in Greece managed to speak the everyday language in a few months. It really depends on your background and how easily you can learn a language. There are certain things that I find difficult such as dictation or talking fully correctly. But, for sure you can learn the basics pretty easily. Greek people love when foreigners try to speak their language and are very helpful and kind as well. So, next summer time you visit a greek island just say "Kalimera"="Καλημέρα"= "Good morning" and you are ready to go!
